Biryani
A variety of a pilau introduced in Indian cuisine during the Muslim rule. Classical biryani is cooked with chunks of meat marinated with spices and underdone fried rice with onions and pices. The food is then laid out in a metal sauce pan in layers and cooked to readiness. Today there are vegetarian recipes for biryani. It is a dish for festive occasions which is cooked with the best-quality rice.
